Brown Rice Tabbouleh

A delicious, healthy whole grain brown rice menu item ideal for a side dish, salad or vegeterian entree.

Ingredient Quantity Instruction
cooked whole grain brown rice 6 c. 1. Combine all ingredients in large bowl. Toss well and chill.
chopped cucumber 1 1/2 c.
chopped tomato 1 1/2 c.
chopped fresh parsley 1 c.
chopped fresh mint leaves 1/2 c.
sliced green onions 1/2 c.
olive oil 1/2 c.
lemon juice 1/2 c.
salt 1 tsp.
freshly ground black pepper 1/2 tsp.
 
    2. Serve with pita bread or on a bed of chopped lettuce.
