Red Beans and Rice

This classic blends pinto beans with bay leaf, garlic, turkey ham, onions, thyme and Creole seasonings. Serve on top of long grain white rice to make a complete meal!

Ingredient Quantity Instruction
dry pinto beans 1 lb. 1. Wash beans and strain.
 
water 3 qt. 2. In large stock pot heat all ingredients with beans and bring to a boil; reduce heat, cover and simmer 3 hours, or until beans are tender, stirring occasionally. Keep warm.
chopped yellow onion 1-3/4 c.
diced turkey ham or ham 1 lb.
chopped flat-leaf parsley 1/4 c.
bay leaves 2
chopped garlic 2 tbsp.
ground black pepper 1 tbsp.
Creole seasoning 1 tsp.
salt 1/2 tsp.
ground thyme 1/2 tsp.
 
cooked long grain or parboiled rice 3 qt. 3. To Serve: For each serving, scoop 1 cup rice into bowl and top with 1/2 cup hot beans with cooking liquids.
